Linguine with Red Sauce
- ¼ cup olive oil
- 4 large cloves garlic, chopped
- 2/3 cup dry white wine
- ½ teaspoon dried thyme
- Pinch dried red pepper flakes
- 3 cups canned crushed tomatoes in thick puree
- 1 cup bottled clam juice
- 1 ¼ teaspoon salt if needed
- ¾ pound chopped clams, drained (about 1 ½ cups)
- 1/3 cup chopped flat-leaf parsley
- ¼ teaspoon fresh ground black pepper
- ¾ pound linguine
- In a large fry pan, heat oil over low/med heat. Add garlic and cook stirring for 1 minute. Add wine, thyme, and red pepper flakes. Bring to simmer. Cook until reduced to about 1/3 cup, about 5 minutes.
- Add tomatoes, clam juice and salt. Raise heat and bring to a simmer. Cook stirring occasionally about 10 minutes. Add clams and return to simmer. Cook 1 minute. Stir in parsley and black pepper. Taste for salt.
- Meanwhile in large pot of boiling salted water, cook linguine according to package directions. Drain pasta and toss with the sauce.
Serving a soup to your elderly loved one is like a comfort food. When they aren’t very hungry but need a little sustenance, a nice bowl of homemade soup might just hit the spot. Try adding lentils for a little extra protein.
Linguine and Lentil Soup
- 3 tablespoons olive oil
- 1 large onion, chopped
- 2 cloves garlic, minced
- 3 carrots, chopped
- 1 cup lentils
- 2 ½ quarts water
- 2 teaspoons salt
- 1 bay leaf
- Pinch red pepper flakes
- ¼ pound linguine, broken into 1 ½ inch pieces
- ¼ teaspoon fresh ground black pepper
- ½ cup chopped fresh parsley
- ¼ cup grated Parmesan cheese
- In large pot, heat oil over moderate heat. Add onion, garlic and carrots and cook, stirring occasionally, until vegetables soften, about 10 minutes.
- Add lentils, water, salt, bay leaf and red pepper flakes to pot. Bring to boil. Reduce heat and simmer partially covered for 15 minutes. Add linguine and simmer stirring occasionally until lentils are tender and pasta is done approximately 15 to 20 minutes.
- Stir the black pepper and parsley into the soup. Top each serving with some of the grated Parmesan.
