What You Will Need

• 1 teaspoon of vanilla

• 1 egg

• 1/4 cup of canola oil

• 1 cup of Skim milk

• 1 tablespoon of baking powder

• 1/3 of a cup of firmly packed brown sugar plus another /14 cup for the streusel

• 1 cup of uncooked old fashioned oats, plus 1/3 cup for the streusel

• 1 and 1/2 cups of all-purpose flour, plus 1/4 cup for the streusel

• 2 tablespoons of butter, cut into pieces, chilled for the streusel

• 12 medium muffin cups

• 12 paper baking cups

• 2 small bowls

• A pastry blender

• A large bowl

• A wire cooling rack

 

What to Do

• Preheat the oven to 400 degrees F

• Line the twelve medium muffin cups with the paper baking cups

• In one of the small bowls, combine the sugar, flour and oats for the streusel

• Mix well

• Cut in the butter with a pastry blender until the mixture is crumbly and set aside

• In a large bowl, combine the oats, flour, baking powder and sugar

• Mix well and set aside

• In the second small bowl, combine the milk, egg, oil and vanilla

• Blend the egg mixture well

• Add the egg mixture to the dry ingredients all at once

• Stir the muffin mix until the dry ingredients are just moistened, making sure not to overmix

• Fill the muffin cups with the muffin mix until they are almost full

• Sprinkle the muffins with the reserved streusel and pat gently

• Bake the muffins until they are golden brown, usually between 18 and 20 minutes

• Remove the muffins from the oven and place on the wire cooling rack

• Allow to cool for 5 minutes

• Remove the muffins from the pan

• Serve while still warm with butter or jelly
